0.5 cup apple vinegar
1 cup water
2 tsp sugar
1 tsp salt
2 red onions
Whisk first 4 ingredients in a small bowl until sugar and salt dissolve. Thinly slice the onions and place in a jar; pour vinegar mixture over. Let sit at room temperature for 1 hour. Do ahead: Can be made 2 weeks ahead. Cover and chill. Drain onions before using.
